that is why I suggested the videos they aren't quite as good as this thread but there are some things that could only be conveyed by pics and writing and some by video....

If you go to you tube there are videos done on polyface farm or ranch that helps show how to do butchering also between this thread and it's pictures and the 2-3 videos you should have now problems, they even show how to easily seperate the breast from the ribcage.
