I just use a small cat food bowl, yes the broody will knock it over but if I put it on the side furthest from the nest area (since the hen will spend most her time in that direction) it reduces the frequency of food/water being knocked over.

IMO it's faster and easier to cage them. Gets it over quick so they don't lose too much body condition. On average they'll break in about 3 days.
