Christmas Cookie Recipes? Help!

So every year my church has a Christmas Cookie Walk to raise money. The trouble is EVERY year they run out of cookies!!! My friend and I are having a sleep over the night before the drop off to make tons of cookies. We would like some really good Christmas cookie recipes, not cookies you could make just any time of year. Any Recipes are helpful!!! Thanks :)
 
If you have a cookie press you can make spritz cookies. They are on the small side but you can make a ton in a short amount of time, and the press lets you make different shapes.
 
The only cookies I can think of that you never see any other time of year are the decorated Santas and reindeer. I suspect those are too much work to make a zillion of them for an event.

Gingerbread men are very Christmasy, and if you limit the decorating to a couple of white icing squigles, they wouldn't be too time consuming. However, I suggest you concentrate on drop cookies and bars, just for the time and labor factor.
