24 hens in freezer

I posted last week dear mom and dad were coming by to help me process 24 white rock hens that would be 3 years old in March. My dear SO went shopping, can't do it.

My fear was some had started to molt.

It turned out that only four had tons of pin feathers and we simply skinned them.

So the job is done. Mom took 10 hens home with her and the rest are in my freezer. They had plenty of fat so these will make great soups, dumplings etc. etc. Can't wait for the first cold weekend to make a pot of something.

If mom and dad hadn't helped this would have taken me 4 or 5 Saturdays to complete on my own.
 
Good job. You can render the fat and make the best pastry dough for savory pies that you have ever tasted.
