why do some birds have yellow crowns first time seeing yellow crowns

You mean combs? Can you post a picture? Young birds, especially pullets have yellow combs.

As they mature - males tend to get red combs earlier than females. Generally the females comb will redden and enlarge as she approaching laying age.
