Doing the happy dance
e we plucked the barred rock cockerels then decided the skin looked bad due to the black feathers so we skinned them. We let them sit a few days then I canned them. I put each cockerel in a jar, minus the back, with salt and a little chicken soup base. I turned the backs into soup for a crowd.
The cockerels were just as good as the broilers we processed a month ago. I canned some of the meat birds too. I put half a meat bird in a jar and a whole BarredRock. LOL
