I have a quick question about eggs.
My ducks are laying eggs faster than I can eat them. In fact I’m now trying to give them away. Each time I get the eggs from the coop I wash them label them with the date and put them in the fridge. I try to rotate these so that I get the older eggs first before I cook or bake with the newer eggs. Sometimes it’s almost 3 weeks before I get to an egg.
My question is this: After I crack the egg open, which is kind of difficult, there’s like this leathery white skin layer that separates the shell from the actual yolk. Sometimes I have to pierce this with my fingers to get the yolk out. Is this normal?
