A Shiba?

I had lost my sweet 18 year old chow/pit mix back in May . She was the best dog ever, very caring and protective of anything smaller then her, but had the chow personality and was a 1 person dog and very distrusting with strangers, though she would have never hurt a fly. I love dogs with a more cat like personality like that. I said I wasn't getting another dog until we buy more property which probably won't be for another year, but then my best friend(I want to choke her for this) told me about one of our co-workers that has a Shiba Inu puppy that desperately needs a home. Other people have asked to buy the pup from our co-worker, but he said he wants me to have it, because he knows it would have a good home and I just lost my dog. I am struggling with this, not sure if I am ready for another one and my boyfriend would be not happy, but I know he would forgive me, he is a sweet guy and would love this pup as much as I would. This baby needs a home and being an asiatic breed it would be a good match for me I think.
I am wondering though if this pup would fit into our household. Has anyone had experience with Shibas? We have 2 cats who both love dogs and will run at dogs rather then from them, my boyfriend has a chi mix who is very dominant, but tolerates other animals as long as they stay out of her way and away from her Daddy and then we have the chickens who free range. We also take care of my boyfriends grandpa who has advanced dementia. I work long shifts, but I have several days in a row off and like to go hiking and play disc golf and considered putting a large kennel outside when I am gone and when we are here the pup would be inside the house.
Does that sound like a Shiba would do ok with us? How are they about barking and being house trained and how sensitive are they to people with disabilities? My old Teddy that I just lost seemed to sense when someone needed help and even saved a Toddlers life once on her own.
Thank you for any input, I am still trying pondering if this would be the right thing to do or not.
