Oh trust me I'm thoroughly grateful that there was no more damage and very aware that it could have been his eyes or face. He is too young to remember so he shouldn't have a fear chickens thankfully. We hatched 7 chicks out this year for the first time since we had the roosters. I'd like to have chicks again in the future but I definitely could a new rooster later for that.

Not necessarily. When my cousin was little - under a year old - she was in a stroller, and two birds flew out of a pine tree right in front of her face, scaring her. She's been scared of birds ever since (and she's in her late 30's now).

I think you know what you need to do with that rooster (or cockerel). Get rid of him before he does more serious damage to your little one. (And watch his current injuries for infection.)

Today he attacked my soon to be 1year old and drew blood in multiple places

He attacked your child! IMHO, there are no other options, but there are other roos. Do not wait for the unthinkable to happen. It’s not IF, but WHEN! And if you plan to continue keeping chickens you definitely do not want your child to be fearful of them.

Consider also that aggressive roos tend to breed more aggressive roos.
If you really want a roo consider a calm bantam as an alternative or none at all.
As some have already mentioned a roosters protection is greatly exaggerated.
The lead hen will keep an eye out and they’ll also take turns keeping watch.

This bird is dangerous and needs to be someone's dinner ASAP.
Rehoming him? How's your liability insurance? Want a lawsuit when he injures someone else's child? This is a very bad option! And, he shouldn't add to the gene pool anywhere.
There really are nice polite roosters out there, and maybe next year, or the year after, you can grow some chicks and get a good one. Or, consider an adult bird who's safe to be around.
Birds who attack small children can NOT be reformed, because those little kids aren't capable of managing this sort of behavior.
I.m so glad your toddler wasn't really injured (this time) and there shouldn't be a next time!
