Alpine does; too much milk for one family?

So what we really wanted to do was get two Nubian or Nigerian doe kids as our first goats this year. We can't find ANY Nubians ANYWHERE and the Nigerians we've located are a two hour trek to get them. There's a pair of Alpine does nearby but is their milk supply going to be too much for our family of six? We don't want to end up with a lot of waste. Thoughts on Alpines or Nigerian Dwarfs in general would also be appreciated.

Can you find other uses for the extra milk? (trade for errands by friends, baking, soap, lotions)

How many gallons does your family use a week?

Do you have a large freezer?

Do you like making soap/lotions/cheese?

Well yes, once I know how to make those things, thàts the plan. We're getting kids so we can get in a bunch of experience before we get into breeding and milking next year. We go through about 2 gallons per week here. Lol, I had to convert that from our Canadian style up here. ;). If the Nigerians are a better match I don't mind driving to get them but I'm trying to make the best choice.
