Ameraucana and soft shelled eggs

My Ameraucan "Fat Amy" was a year old the end of March. She didn't lay her first egg until February at almost 11 months old. She was the last of my flock to lay. Her first egg was a normal egg but on the small side. She then didn't lay for several days and then we had a soft shelled egg that was dropped in the coop at night. She then had a few hard shelled eggs followed by a fart egg. We are now at the beginning of June and she has continued to have a soft shelled egg about once a week. She is not a good layer. We are lucky to get 2 hard shelled eggs from her in a full week. I have removed all treats from the girls as I had been feeding them green leafy veggies each morning that included spinach which I read is not good for them. There is oyster shell and egg shell available at all times. I realize that acting "normal" doesn't mean much but I have seen no change in her. She is still the goofy girl my family loves.

Any thoughts?

Also, 2 of my other girls have begun eating the yolks of the soft shelled eggs. These are always laid at night, onto the coop floor under the roosts and popped open before I get there in the morning. At first I thought they were breaking from hitting the ground until I noticed the evidence on my girls' beaks. Anything I can do about this?
