Ameraucana not laying?

Are you sure she is not hiding eggs? Ameraucana (and EEs) seem to be pretty variable when they start laying, they've been bred more for egg color than straight laying ability like a lot of the popular breeds. So at 7-8 months, your girl is on the slow side, but others have been slower. Also this time of year, with the shortening days, it may slow her down even more, some birds won't lay until spring. As long as you are sure she is healthy, on a good diet, and is a pullet (always double check that part :) you probably just need to be patient. Some people do put late pullets under lights, I personally don't care to.
