Ameraucana or Easter Egger?

This is Big Mama, she's about 3 years old. She lays bright blue eggs almost daily or every other day. I bought her as an adult and the person didn't know what breed she was either. I'm assuming she was purchased as a chick at tractor supply or some other feed store.

I have a Plymouth Barred Rock rooster and was wondering what their chicks would look like and if they'd also produce blue eggs if I chose to incubate and hatch them.

I’m not sure if I missed this... but who layed that mint colored egg with speckles?! It’s so pretty!
