what is the term for calling a partridge wild-type hen and a wheaten hen? I know both roosters are BB red.

American games are known more by their lines, rather than color. They are referred to as "Red birds" or Red fowl typically.

BBred hens are almost always going to be a Hatch, Wheaten's can be a number of strains.
