I processed my firs batch of chickens this month. I firmly believe in not letting anything go to waste, especially if another creature gave its life to feed me. I know how good liver is supposed to be for you... I know it is... but I just...can't...EAT it. It isn't the thought of it that bugs me... its the texture. I pick the giblets out of my thanksgiving stuffing (and feed them to the dog sitting under my chair) I just cant stand it. I thought about maybe making sausages? mixing enough other stuff in to hide the liver. The livers are all in the freezer and my roomies look at me with suspicion each time I insist I will cook and eat them... I gotta figure out what to do with them...or they get fed to the dog.
I would greatly appreciate any suggestions.

It's not a waste to feed them to the dog.
The most interesting way I've ever been asked to serve them was raw with lemon juice. Couldn't do it.

Imp- I don't think this is going to help you

The best use of chicken livers I know of is to put them on a hook, cast them into a river or pond known to be full of catfish, jerk hard when a tug on the end of the line is felt, and then reel in.

From there you just get a pair of skinning pliar, a knife, some Golden Dipt Cajun Fix Mix, and in short order you got yourself a fine meal.

Personally, I think it beats the heck out of patte'!

Dirty Rice
It's a Cajun dish.
We make it with chicken livers and ground sausage meat, delicious.
