Anybody a canning guru?

I am new to canning and I am finding that sometimes, my jelly sets up good until I do the hot water bath... then it is thin and runny... Since everyone give me great chicken, duck and guinea advice, that someone will have the answer I am in need of.

After it cools down it's still runny? If so I would find another recipe.
Easy fix though, just call it syrup :p

Yes, after it cools it is still runny. The thing is, that the remaining in the pan and on my ladle gelled nicely... I even put one in the fridge to see if it would thicken up but it hasn't.

Love the syrup suggestion!!! That would be great but this is a sweet red pepper jelly... It has tiny flakes of red pepper in it that are supposed to be suspended as it thickens... kinda just ruined it for me. I might dump it back in a pot, heat it, add a tiny bit more pectin and then hot water bath it again and see if it helps.
