Anybody have a favorite violet jelly recipe?

I thought others have posted about this before but I didn't find anything with a search.
So if you have a recipe you like please let me know. I'll also be googling it and going to allrecipes.com.

Wow... I want o make violet jelly now... but sadly, my husband mowed and they are gone for now.

Do you happen to know a good one for lavender, that I'd like to do this summer?
 
I am going to try this one and others. At the end of this recipe, it says you can use it for other herbs and flowers. I want to try dandelions and some of the mints I have. I can't wait to start. I have to go to the store first.
 
Thanks everybody! I think maybe it's the lavender jelly others on BYC have made. I also came accross the prairielandherbs recipe and that is basically the one we are using. I just wonder if you have to use all that sugar!

I want to make violet jelly, not sugar jelly! I think we'll try to cut it down a bit. I don't have a recipe for the lavender but that can probably be searched on this site. I'll let yous know how the violet jelly comes out!

Well, we made 2 batches of violet jelly. The first was made with Sure-gel and 4 cups of sugar. It didn't jell at all. (I have never had luck with this stuff). Then DD made a batch with a product I get at a Mennonite store. I think it's basically waxy corn starch. She used 2 cups of sugar and it only jelled slightly. What I normally do when they don't jell (which is always with Sure-gel) is to thicken them with the clear-gel when I open them. The violet jelly is very tasty and we would definitely make it again using less sugar and more clear gel. It has a very delicate sweet candy like flavor. The sugar content in the first batch literally choked us when we first tried it, but I plan on keeping it and using it as a sweetener for tea. I took a few pictures during the process but I only have time to download one this morning. Dial-up is slow for downloading. ( And yes, we did do a full rolling boil with both batches.) The filled jars are so pretty and they look just like what you see on the prairielandherbs website.
