I have a large hydraingia, the kinda plant with broad leaves and purple or pink blooms, in my yard that I compost around. The chicken know this is where to find goodies. What I'm afraid of is the spring when it blooms, if they try to eat it, will it be harmful to them?

They'll be much more interested in the compost than the hydrangea.
While it isn't something that should be fed to chickens deliberately in large quantity, especially confined chickens, they will tend to avoid it if they have other food sources.
