When I started noticing strange neurological symptoms at age 20 (e.g., numbness, fatigue, vision distortion) I ran an elimination diet—which is misery if you’ve never done it! Adding gluten back was the only thing that triggered those symptoms again, so I have stayed 100% GF as well as I can. Sometimes errors happen, but coping mechanisms include hard liquor (there’s some biochemistry to support solubility of gliadin in EtOH), probiotics, and a supplement marketed in the U.S. as “Gluten-Ease” by the brand Enzymedica, which contains the enzyme DPP-4 (naturally secreted by the intestinal lining, and is the only human enzyme that can break apart the glue-like structure of gluten, one small bit at a time).

I cheated a little over Christmas, my aunt sent a box of homemade cookies and I decided I would indulge. That was the first gluten I've had in two years.
It's really not that bad being GF, I don't really miss the bread, and pasta since I have great recipes and lots of options at the store.
The one thing I miss is convenience, but I'm not in pain anymore so it's worth it.
