At what point is it wise to remove roos spurs?

We have a large fowl cochin roo who is not aggressive at all but his spurs are getting pretty long and just a few days ago he got hung up with one of them in the fence. Do you wait until they curl all the way around back to his leg or is it better to trim them earlier? And how on earth do I do this without hurting him... I am a total sissy when it comes to doing this kind of stuff. Here is a pic of his spurs as of today...
