So, about when can you tell for sure?

I can usually tell by the time mine are two months old but that is by careful observation of behavior and physical traits. Many can be sexed by physical traits at 3 months old and all but late developing toms can be be sexed by 6 months old.

When do turkeys start breeding?

Normal sexual activity begins in the spring of the year following the year they were hatched.
