Baked potato salad

Has anyone tried this one?

I just made it with a few modifications... I actually roasted my potatoes, didn't use mayo (I'm out and haven't made any), used rice wine vinegar and don't have the green onions on hand....


But dang this stuff is GOOOOOOOD!!!!!!!

I saw your post and it reminded me of another potato salad recipe I had just found. I haven't tried it yet but it sounded interesting enough to try!

Tangy Potato Salad

8 C. cooked potatoes(cubed)
10 bacon strips (cooked and crumbled)
3 hard boiled eggs (chopped)
1 8 oz carton French Onion dip
1/2 C. dill pickle relish
1/2 tsp salt
1/2 tsp pepper


Combine first 3 ingredients
Combine next 4 ingredients
Stir together and refridgerate at least 2 hours
