Basic info on starting egg business in California

It's really not that difficult, it just takes an understanding of the requirements of the National Organic Plan and a little prep work.

The bulk of our eggs go to an organic producers cooperative, but we have no problem moving 7 or 8 dozen a day in direct sales. It goes in fits and spurts. We hadn't sold too many in the past few weeks (there is always a lull this time of year) and the eggs we were setting aside for direct sales were starting to stack up. We made a few phone calls and managed to sell 75 dozen this week.
