Breeds: I'm fairly new to this and would consider both meat and layers. Currently, most of my efforts are focused on layers. We use chickens as breeding stock to produce organic chicks.
Age: must be at least 5 months old, but not older than 15 months.
Price: depends, but I'm not going to pay any premium for any kind of blue bloodlines or show quality.
Guineas can be keets.
Ducks can be both ducks, hens, and ducklings.
