I've got pine wood chips in the chicken run, and would like to add some other bedding to help with composting and the smell. Would green hay be appropriate?

Hay is very likely to mold....and would be a 'green' in the composting world.

Are you using the thinner wood shavings or coarser pine chips now?
...and are having trouble with odors?

The thinner wood chips from TSC. We were going to get a load of course pine chips for around the runs, and may try it in the run. We notice odors mostly after it rains. The runs are covered, but blowing wind goes where it wants.
 
brown/ dried/ dead vegetation. Grass clippings, leafs , more wood chips. I have to add more chips (4"-6") every two or three months. The more chickens you have the more it eats up the chips.

Coarse wood chippings, like from a tree trimmer, are the way to go.
'Mulch' from a landscape supply would be better than the shavings, but still rather lacking.
