Straw or wood shavings for bedding?

In winter I have both (sort off deep litter), but I will transfer to shavings only during spring and summer (it is easier to spot clean).

Out of those two? i would choose shavings, i actually prefer flax bedding but it's hard to locate.

how does bedding differ?

Wood shavings are more absorbent than straw. Straw gives off moisture unlike shavings that isn't good for chickens to breathe.
