What is your definition of "best"? It's easier to help you when you offer some specifications.

Coturnix are tamer, mature and grow faster, have bigger eggs for eating, hatch with less incubation time, and are not AS hostile to their mates although they still can be. Don't taste a good as Bobwhite but still good and produce faster. Larger eggs than many quail and take less food per pound than a chicken to produce the same pound of eggs.

Bobs, Valley, mountain all can be harder and take longer to raise.

Button quail need seperate cages for each pair and are flighty. They do not like to be held... but they do grow and mature fast however.
