Best instructional and processing chickens or turkeys yourself?

One time I was adventurous enough to process my own roosters for food. The result was me deciding no matter how much chicken is at the store, it is worth it. However, it's been a few years and I think I'd like to try again, but I think I probably need better instructions than just trying to remember from when I was a kid and asking old timers I know.

I've watched a few videos on youtube, but I am not sure which is the best process to go with.

I am also thinking of meat rabbits. My brother is willing to come show me how to dress those out, or rather teach my boys since I am not sure I can do stomach that just yet. I would like to know the easiest/best way to do that as well, if anyone knows.

Anyone care to point me in the right direction? I really would like to grow more of my own food, especially meats.
 
There is an excellent thread in the meat birds forum under the archives tag at the top - the one called "Killing, Plucking, Eviscerating and Cutting Up Your Chicken" which is step-by-step instructions complete with pictures. It is graphic so be prepared for blood in the photos.
