Best tasting quail breed?

Hey all, I'm looking for mostly meat birds, taste trumps size. Which breed do restaurants use? I've narrowed it down to butlers bobwhite quail. Does anyone know who has adult butlers for sale? What's everyone's thoughts on this? I plan on raising them outside more naturally inside a pen.
 
All Bobwhites are great tasting!:drool Butler Bobwhites are the biggest, size wise. I raise Butlers and mine weigh 24 to 28oz. had a couple over 30 oz.
I currently don't have any for sale.
ETA-- Quail are known by species not breeds.
 
Restaurants probably use Coturnix quail. They are the easiest, therefore, cheapest to produce for meat.

While I do believe they taste different, I'm not sure I'd be able to tell the difference. Quail taste similar to dove. While they are closer to duck than chicken, they are still a little different. Both good in different ways.
