How do I know if my black eyed beans are sprouted enough for my hens? I know that they are poisonous when unsprouted and raw, and I'd really rather keep my hens healthy...
This is what they look like just now. Is that okay, or am I better giving them another serving of boiled beans and leaving these for longer?

Are those black-eyed peas or some different strain of beans I can't find. I was curious as I ferment different things too.

To answer though, yes, as long as you sprout, ferment, or boil the bean or pea or legume, it's safe for chickens. Those sure look sprouted!
