You're welcome! Here is a list of terms that are necessary to know as you make your way through the chicken world:

Rooster/Cock - A male chicken that is one year of age or older.
Hen - A female chicken that is one year of age or older.
Cockerel - A male chicken that is under one year of age.
Pullet - A female chicken that is under one year of age.
Capon - A male chicken who has been neutered.
Sire - A male chicken who has produced offspring.
Dam - A female chicken who has produced and hatched offspring. (If she is currently in the process of brooding chicks, she can be called a broody as well.)
Grandsire - A male chicken whose offspring have also had chicks; basically grandpa.
Granddam - A female chicken whose offspring have also had chicks; basically grandma.
Stag - A male chicken of a gamefowl breed that is under one year of age; the equivalent of cockerel.
Bullstag - A male chicken of a gamefowl breed that is one year of age or older; the equivalent of a rooster or cock.
Gamefowl - A type category that is used to describe all of the breeds that were originally bred or have been used for cockfighting.

(Note that the words stag and bullstag are also used to describe males of the red junglefowl species.)
