I'm new to raising guineas - for eggs & meat - & never gave butchering much thought as i grew up hunting & eating ducks. How necessary is bleeding? I had planned on shooting guineas from a distance depending on how tame they endded up.

I believe that bleeding out the bird will remove some of the gaminess from the meat. For game birds, my dad always soaked them in salt water for a couple of hours in the fridge after butchering to remove the blood from the cut up carcass before freezing or cooking. You could probably do the same with your guinea.
Even if you shoot the bird, you could probably cut off its head and hang it by its feet for a little bit before processing, just to allow any blood to drain that you can.
