You have to cull for temperament if you want good tempered males, no matter the breed. I used to breed BBS Orpingtons for years (not what folks are calling "English"-those types of Orps I don't personally like, though all Orpingtons are an English breed). My big blue rooster, Suede, was the sweetest rooster on the planet and his sons followed suit 99% of the time. I rarely heard of a nasty Blue Orpington rooster but I dont know what the temperament is like on those so-called English Orpingtons. They must be culled for temperament or you won't have a good tempered line. Goes for all breeds.
It is more of a line thing than a breed thing. I had a nasty line of Delawares, a breed generally known to be friendly and easygoing. Got rid of them (hatchery lineage). Now, the rooster I have from true heritage lines is easygoing, sweet, loves to be picked up and rock in the hammock with folks. His sons are also super lovable. Temperament is heritable and must be selected for, just like leg color and body shape.
