When should I stop turning my bobwhite qauil eggs?

Stop turning Bob eggs on day 21. They should hatch day 23 or 24....24 is the normal day for hatching. This is of course the general time, depends on the temperature of the bator....cooler temps = 25 to 26 days, warmer temps = 23 days

Coturnix Quail is day 14-15. as they have only a 17 -18 days of incubation.

That would be for coturnix or buttons. Bobwhites have a longer incubation period.

Chicken eggs hatch on day 21 and stop turning on day 18.

That would be for Coturnix and Button quail that have a 16 to 18 day incubation period. Bobwhites have a 24 to 25 day incubation period. Chickens are 21 to 23 days of incubation so you should stop turning on day 18 or 19.
