Breed meat birds

My wife and I are considering breeding and raising our own meat birds. What breeds are best for this? How viable is it? How difficult is it? I don't know anything about breeding chickens and I seem to notice most people don't breed them just buy a bunch of day olds. Is there a reason for that?

Breeds: Cornish + Rock

Although you can breed your own meat birds they'll never bee like the cornish X that you get from the hatcheries.
