Breeding true Color

How long must I keep my white Calls separated from the other colors to ensure none of the other colors have mated with the white duck and that I will get white ducklings?

If she was mated from a different color id separate her for 3 weeks just to be sure. They can easily still be fertile after a week from another drake. You could also just break open an egg after a week and see if they are fertile still or not. This is how I check mine so I don't have to run the incubator just to find out.
