Breeding your own meat birds???

We originally ordered baby cornish cross from a local feed store for the purpose of raising for meat birds. We have made alot of modifications to our setup, and we have been brainstorming ideas on chicken farming year round. We thought about keeping a handful and incubating the eggs to breed our own meat birds. We have breed and raised chicks ourselves in the past but not meat birds. Has anyone had any luck with this, or does everyone order new chicks every year? If you have had success breeding your own, do you have any pointers for us? Such as how many pullets vs roosters and such. We would appreciate it.

There are a ton of threads in here about heritage birds and cornish X, and everyone has their own favourite. I chose Sussex and buff orpingtons because I could get them locally and they're pretty big birds. I can breed them separately and make sex link crosses if i wish. I haven't processed one yet though so who knows yet if I am heading in the wrong direction. I've never done meat birds and have only had chickens for a year. Good luck!
