I would like to breed some of my own chickens. I have been told that if I put a certain Cockrel with my Hybrids all the red chicks will be hens and the white ones Cockrels making it easy to sex as soon as they hatch. Is this correct ?

There's a bit of a knack to it. Apparently you need a red rooster (like rhode island red) and a silver-based hen (e.g. white). The pullets that hatch will be gingery and the roosters white. However if the hens are crossbreds it may not work, as they may have some red colouring in their makeup.

I've never bothered to aim for day old sexing so I'm definitely not an expert, but that's my layperson's understanding. If it's true then I doubt it would work with hybrid layer hens (presuming they're red-based).

You already have hybrids?
If so, they are already a mix and a rooster of that same mix, or of yet another mix, or of another breed would just make more of a mix.

Short answer is no. You aren't going to get the white=cockerel and red=pullets. Yours are a terminal cross, which means, you cannot do it again.
