Hello,

We are interested in not refrigerating our eggs now that we finally have 6 hens up and laying! I have a rotation system worked out for our hard boiling (10+ day old) and fresh egg needs.

I’ve read that once an egg is refrigerated it shouldn’t be then turned back Into a room temperature egg as it will get wet from condensation and suck in bacteria via pores.

How do you handle this when it’s 0 to 50 F outside in the day time? The egg is already refrigerated by Mother Nature when I go collect them.

I just keep them on the counter.
Bring them in cold does not create any condensation as it's so dry in the house.
Collecting frequently during frigid temps allows me to avoid eggs that are frozen unto cracking...another risk during the cold season.
