i had the same problems with some of my dogs, you can't beat it out of them, they are so hard headed, i've used the dead chicken to beat the crap out of my shepherd, it didn't work, i don't tolerate chicken killing very well, the dogs i have now are in a fenced yard, that helps unless i have the occasional chicken commit suicide and jump in the pen, i had a hen do that and the dachshunds skinned her alive, i had to do her in, i wasn't the least happy, my pug/boston mix stood clear at the other side of the yard watching the others saying "oh just wait til dad gets here!" i haven't had a problem in awhile thank God, i did have a young chick come in the dog yard, my dachshund rudy came running in the house with it in his mouth all proud, if he would have just moved like that in the show ring, well he did get his championship minus the chicken in his mouth LOL!

I am going to try and correct the problems with the pen though, I really dont want a dead chicken. You get money and time tied up in them and their premature death becomes a costly loss. Then having to do that to a dog really aint cool either. Dont get me wrong, ifin he kills a chicken I will take severe measures. Ifin he kills twice thats it for him, buts its really on me to make a HUGE effort to insure that he does not kill at all. It was my failure in the first place that allowed him to attack the pullet.
 
Forgive me in advance, but I don't see how a run with chicken wire STAKED down is going to slow down a pit bull, especially one that has had a taste of chicken. I've seen what those jaws can do! I think you are going to have to reinforce that chicken wire with chain link at the minimum, or cattle panels, and add a skirt of similar material at least 2 feet out or 18" down to keep him from digging under. I would not even trust hardware cloth. Good luck and I hope you come up with a solution that works, maybe incorporate electricity.
