Building Incubator/ ?

I've been researching and been debating for months on building an incubator. Well, after my wife kept pestoring me about moving and old gun cabinet I decided to use the bottom base portion which has a glass door on front and should work fairly well. I went and bought a thermostat, temp and humidity guage and stuff for my lights this morning. Still need a fan. I have a couple questions though. I have used one of the basic cheap incubators before and just laid the eggs in it on the wire screen. Seemed to work ok. Can I just lay these eggs on the flat wood surface of my new incubator or should I go ahead and install a mesh screen thats raised a couple inches. I know I will still need to turn the eggs either way. Also, I was wondering about how to add an outside adjust dial for the hot water thermostat. Didn't know if that was really needed since hopefully once it is dialed in it won't need to be adjusted much.
 
most water heater thermostats have to high of a temperature range for real efficient hatching. they will work however.

depending on the thermostat you have. mount it on risers off the wall of the cabinet, with the control facing out. mark the position of the adjustment and drill a hole through the sidewall just big enough to get a screw driver in. use a piece of wood or cork to seal the hole.
