It depends on the breed... Pekins can be table ready at 6-8 weeks, Muscovy take a bit longer.

We have Muscovy. I was wanting to wait until the drakes get their tail curl as only want to eat the drakes and keep girls. Would the meat be too tough then though?

Muscovy don't get the tail curl. You sex them by size and/or voice. Males are about twice the size of the females.

Oh, didn't know that. Thank you Do you happen to know at all about laying eggs and if they lay with seasons or year round?

They'll usually take the winter off, but so will most ducks (and chickens).
