butchering birds, and meat birds have questions

There are lots of dual purpose birds; all mine are. Check Henderson's. There is not really much difference between them in terms of flavor and tenderness and age of slaughter.

There is a roo in my fridge we did yesterday. I think he hatched last May. I considered cooking him today but the rigor mortis is still quite evident. Tomorrow he will get stewed or roasted (slow and covered) if the legs move freely; otherwise he waits another day. (He had recently gotten quite ungentlemanly toward the girls, actually scattering the flock; they were hiding from him.)
