How old should a roo be before processing. Mine are a full 10 weeks today. BO and RIR. They free range and are very healthy birds but I don't need 6 roos ha.

That depends on how much bird(size) you want, & how tender you want them.(Tenderness can be bred for).

I generally butcher between 5-6 months to 1-2yrs, depending on the chickens. Oldest birds I've butchered are between 4-5 years.

You can do them now if you want.
I used to slaughter at about 14 weeks, when they started getting randy.

I like to confine my cockerels, limiting their exercise, and putting a little weight on. Personally, I like to cull a few at a time. Anytime will work. But younger, are more tender.
