Can anyone share a good fast dinner...kid friendly. Potatoes?

I'm going shopping soon and I have ONE day left to fill and I try to pick something we had never tried before and this weekend I have off so going to spend a little more time with dinners this weekend. Usually we pick something fast like potato burgers/tuna over buscuits...something like that. But I would like something new to try. I have a 5 yr old whos fussy so something tasty or something a five yr old would consider tasty. He LOVES potatoes! Anyone have a potato casserole type thing?
 
well, you could slice them up and make fried potatoes with catsup..or you could boil them and add flour, an egg, minced onion etc and fry them into potato pancakes

Tater Tots Casserole
Soupy burgers (one can of Campbell's veggie soup and cooked hamburger,like a sloppy joe) Kids love this one!

Ewesheep...I like that one. we make tator tot casserole but we make it with fried hamb/cr mush soup and green beans with tator tots on top.
Mother...We LOVE the fried potatoes too do you have the potato pancake recipe. Hubby has been wanting me to make those but can't fine a good recipe to try.
 
You could do RANCH potatoes (you can have your son help with this)
you cut them into fours skin on place in a zipper baggie and spritz some olive oil or canola (I like eveo) but if he is picky go with conola 2 tbs works well for me
Mix in a packet of Make your own ranch dip halfed or stronger if you like ranch (I like Hidden valley but there is all kinds out there)
have son shake the bag all up makeing sure they get well coated with oil and ranch.
Place on UNGREASED cookie sheet bake at 350 till golden brown or your taste.

This goes well with fried or chicken or hamburgers (the ranch dip makes great burgers) or you could do a roast IN the bag the same way just pour the ranch into the bag the juices will blend it for you be sure to baste though this way it gets all over the roast and potatoes

I make things like this all the time and my family loves it.

you might also wanna try some FRITO pie it is a cassarole type dish it is layered you start with fritos on the bottom canned chilli (No beans) cheese (chedder jack is the best for this) just keep going all the way to the top until you reach the top just be sure to finish with cheese bake at 350 until cheese is melted and it is heated throughout.


Because you have a 5 year old you may want to try some mini pizzas for a snack biscut dough spread out sauce cheese toppings bake till done


Or spider dogs kids love this one take a hot dog cut each end down about 2inches so you have fours on each end now put it in the oven and bake it or put it on the grill or over an open fire like camping out watch what happens they love to wath the ends curl up their faces light up and they always ask how did it do that I always say before hand there is a spider living in your hot dog they say no there isn't to which I say yes there is watch when it is done you will see it I now say it to my grandkids and they love it they always ask me to do them for them any

One of my families favs is when the potatoes are sliced really thin and I bake them at 375* for like 45 minutes in a little butter and seasoning salt. I usaully use red potatoes for that. Or I'll take baby carrots and dice them and onions and potatoes and dice them, a little butter and seasoning salt. Same temp and time. Delish!
