We used to have stuff in the garden but we took everything out and left the dirt bc they live digging in there. Anytime they find s root from a previous vegetable they eat it. Is this okay for them?

Well some of the plants that were growing are toxic to them but other than that idk. It wasnt my idea to put the garden there but they did it anyway without me knowing.Yes, chickens not only can eat roots but from some small roots they gain some of the nutients that they believe they need during moult.
It's a shame you took everything out of the garden. Unless the area one plans for chicken keeping grows plants known to be toxic to chickens, it I would suggest much better to leave the ground as is and fence around it. The chickens will do the weeding anyway. If you are lucky and plan where you make the chicken run carefully you may end up with some shrubs that the chickens don't dig up and these will provide shelter and entertainment.
