Can I eat the turkey eggs that have been outside for 3 weeks?

Hi all,
Just wondering if any of you would eat any of your turkey eggs that have been outside on a nest that hasn't been sat on if the temps have been in the low 40's at night and not over 60 during the day. Some of these eggs are going to be 3 weeks old in a few days, most of them are going to be 2 weeks old.
I don't have an incubator, my hens don't appear to want to set and there are 30 eggs out there now. The only time they've been sat on was when one goes in to lay another egg on the nests.
Just wondering. I've never eaten a turkey egg but heard they were good.
 
Put each egg in a glass of cool water. If it floats,, no. If it sinks, yes.
 
Thanks! If she doesn't set soon I may resort to eating them rather than having them go to waste.
