Can I take hatching eggs out of the country?

you will have to have USDA EXPORTER License, they will have to be NPIP Certified, Avian Infulenza tested nd most likely need a health cretificate on the breeders from a avian vet. Sneaking them out is not a wise option. Alot involved just for a few eggs.
They have gotten bad on it since the A.I. problems.
Try this link, it has all the regulations in the import export section

Related to the original question, I wonder what they do about people who have R.V.s , and there are eggs in the fridge? Do 'they' take them at the border?

you have to declare any food, plant, animal or what not any time you cross a border, for consumption purposes, I'm sure they are fine, those aren't fertile anyway most the time, totally different than eggs for hatching. The US, Canada, and Mexico have less strict rules for stuff passing threw each other, as we are all connected anyway, same cant be said for stuff crossing the pond. They have all that info in the site I posted. Certain countries, like most all the middle east, are just totally banned, for obvious reasons. Others you can have eggs shipped directly to you, some have to go into quarantine for hatching, in all cases, all birds must go to quarantine facilities for a minimum of 30 healthy days.
