Can they go without water and food for a day or 2?

That’s the thing with chickens especially if they are cooped up in the run and bored. They can soil the water.
Mine throw a quiet riot! Kicking up everything! Dig where they never used to. Jumping on things they normally wouldn’t. They’re brats!!!
I wouldn’t trust things to stay as I had them before I left.
 
I had my younger brother watch my baby chicks while I was out for an extended period of time....... came home to more than half chicks gone. :(

Just make sure there is more than enough water supply and food, you should be good to go.
 
Knowing where you live might help ...

Will they have access to the run?

While a day without food won't be too bad ... without water could be fatal ... depends ... on climate ... Too HOT, and they drink lots of water, run dry and over heat, or too COLD that it all freezes!

IF they have access to the run ... and you live where it is cold enough for snow, AND there is snow in the run ... then, they should be OK ...

As mentioned numerous times ... having an extra water & feeder would be ideal, as long as your water isn't gonna be frozen in 12 hours! ;)

ETA - Of course if you had a friend that you trusted, they could swing by on day two, and top off ...
