The tomatoes really need at least 1 more day to ripen ~ but, I had to pick them ~ because the chickens will taste them if I leave them out too long. I've read that they need to be picked firm and ripe, and used that day for salsa. Does anyone let them sit before making salsa?

Thanks!!!!!

Yes- put them on a sunny windowsill or something. I use them when I have enough for a big batch- so there are some just ripe, and some that are a little soft. Yum!

yeah no worries. i had a desk in our sunroom covered in unripe and semi-ripe tomatoes after ripping up all the plants at the end of last season. they gradually ripened over a week or two and i made pasta sauce to freeze every time a decent amount was ripe enough to use. some were completely green at the start.
